Starting in the 5th, le Panthéon is a must see, make sure you book the tour on the top of the building for stunning views over Paris. There are also some good shots to take from the surrounding streets giving a great perspective.

Jardins du Luxembourg: probably the most pleasant garden in Paris with a nice view on the Senate building. A great place during spring (or winter when it snows). Quite often some photo exhibitions on the grids of the garden.

Invalides: formerly a military hospital it now hosts a museum, a cathedral, a bunch of public organizations and the grave of Napoléon. Photography speaking, the building offers great view especially by night from Pont Alexandre III. In the summer an interesting sounds & light show in the main courtyard.

Musée d'Orsay: A former train station, now a museum. For an iconic view on Montmartre through the clock, go at the café Campana (5th floor). One the most well known shots of Paris...for a good reason.

Eiffel Tower: Well...everything as been told about this old lady. So, go there early, sunrise is fantastic (preferably from Trocadéro). Actually one of my favorite views is from below where you feel small vs this amazing architecture. Another original view is from Square Rapp in the 7th where you can get an interesting composition with the buildings framing the tower. Most of the streets around this area offer a good view on the tower.
